Ingredients
Bicuits
  • 2 cups flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup cold butter, cubed
  • ¾ cup light cream or milk
  • Sugar and icing sugar for dusting.
For the filling
  • 2 cups blueberries
  • ¼ cup sugar
  • 1 tbsp lemon juice
For the whipped cream
  • ¾ cups heavy cream
  • 2 tbsp icing sugar
  • ½ tsp vanilla extract
Instructions
  1. Preheat oven to 425, line a baking sheet with parchment paper

  6. To assemble, split the biscuits and layer with whipped cream and blueberry mixture and replace the top. Dust with icing sugar and serve
