Peanut butter sandwich cookies

A layer of peanut butter frosting in between two cookies makes for the best peanut butter sandwich!

Ingredients
  • ½ cup butter softened slightly
  • ½ cup brown sugar
  • ½ cup white sugar
  • ½ cup peanut butter
  • 1 egg
  • ½ tsp vanilla
  • 1 cup flour
  • ½ tsp baking soda
  • ¼ tsp salt
For the middle
  • ¼ cup butter softened
  • ½ cup peanut butter
  • 1 cup powdered sugar
  • 2-3 tbsp. heavy cream
Instructions
  1. Preheat the oven to 350 degrees.
  2. Cream together the butter, peanut butter sugars. Add the egg and vanilla and mix until fully incorporated.
  3. Add the flour, baking soda and salt. Stir to combine.
  4. Roll into 24 balls and place on a baking sheet.
  5. Bake for 10-12 minutes.
For the frosting
  1. Cream together the butter and peanut butter until light and fluffy.
  2. Slowly add the powdered sugar.
  3. Thin the frosting with heavy cream.
  4. Once the cookies are cooled pipe or spread the frosting on one cookie and top with another cookie
Notes
If the dough feels too sticky when rolling it add a bit more flour.
