Peanut butter sandwich cookies

Serves: 12 sandwich cookies
- ½ cup butter softened slightly
- ½ cup brown sugar
- ½ cup white sugar
- ½ cup peanut butter
- 1 egg
- ½ tsp vanilla
- 1 cup flour
- ½ tsp baking soda
- ¼ tsp salt
- ¼ cup butter softened
- ½ cup peanut butter
- 1 cup powdered sugar
- 2-3 tbsp. heavy cream
- Preheat the oven to 350 degrees.
- Cream together the butter, peanut butter sugars. Add the egg and vanilla and mix until fully incorporated.
- Add the flour, baking soda and salt. Stir to combine.
- Roll into 24 balls and place on a baking sheet.
- Bake for 10-12 minutes.
- Cream together the butter and peanut butter until light and fluffy.
- Slowly add the powdered sugar.
- Thin the frosting with heavy cream.
- Once the cookies are cooled pipe or spread the frosting on one cookie and top with another cookie
If the dough feels too sticky when rolling it add a bit more flour.
