Coconut Overnight French Toast
 
 
Ingredients
  • 1 loaf French bread
  • 8 eggs
  • 1 cup milk
  • 1 cup light or heavy cream
  • 1 cup cream of coconut, found with the mixed drinks at the store
  • 1 tsp vanilla
  • 1 tsp coconut extract
  • ¾ cup sugar
  • ½ cup flaked coconut
Instructions
  1. Tear or cut a loaf of French bread in large pieces. Place them all in a 9x13 casserole dish that has been sprayed or buttered.
  2. Crack the eggs in a large bowl and whisk. Add remaining ingredients and pour over the bread pieces.
  3. Cover with foil and leave to sit over night in the fridge.
  4. In the morning preheat the oven to 350.
  5. Leave the foil on and bake for 30 minutes. Remove foil and bake for another 30 minutes.
