Cauliflower gratin
 
 
Ingredients
  • 1 tbsp olive oil
  • 1 tbsp butter
  • ½ yellow onion, diced
  • 1 clove garlic, minced or grated
  • 1 tbsp flour
  • pinch of salt
  • 1½ cups chicken stock
  • ¼ cup cream cheese
  • ½ cup shredded cheese
  • 1 head cauliflower, chopped.
for the topping
  • ½ cup shredded cheese
  • ¼ cup breadcrumbs
Instructions
  1. In an oven proof skillet, heat the olive oil and butter over medium.
  2. Add the diced onions and garlic and cook until the onions are softened.
  3. Add the flour and cook for 1-2 minutes. Season with salt.
  4. Pour the chicken stock in and stir to combine. Let the mixture thicken slightly and add the cream cheese and shredded cheese until melted.
  5. Place the cauliflower into the skillet and toss to combine.
  6. Cover the skillet and cook for 12 minutes over low.
  7. Set the oven to broil, sprinkle the top of the cauliflower with shredded cheese and breadcrumbs.
  8. Broil until cheese is melted and crumbs are toasted.
