Roasted brussel sprouts with carmelized onions and bacon

Ingredients
  • 1- 500 g bag frozen brussel sprouts
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 medium white or yellow onion
  • 4 pieces of bacon, diced.
  • ⅓ cup pistachios
  • ¼ cup dried cranberries
  • salt and pepper to taste
Instructions
  1. Preheat the oven to 400 degrees
  2. Toss the brussel sprouts in olive oil and roast for 30-35 minutes, turning half way.
  3. Meanwhile caramelize the onions in a large pan with extra olive oil and butter. Set aside.
  4. Cook the diced bacon until crispy. Drain and set aside.
  5. Combine the brussel sprouts with the onions, bacon, pistachios and dried cranberries.
  6. Season with salt and pepper and serve warm or room temperature.
