One pot lemon lentil chicken and rice

Ingredients
  • 1 tbsp. Olive oil
  • 2 chicken breasts, cut into bite sized pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • 1 cup green lentils, rinsed
  • 1 cup rice
  • 4 cups chicken broth
  • juice and rind of 1 lemon
  • ½ tsp salt
  • ½ cup frozen peas
  • chopped parsley (optional)
Instructions
  1. In a large pot heat the oil over medium heat.
  2. Cook the onions until soft. Add the garlic and herbs and cook another minute.
  3. Add the chicken turning to brown both sides.
  4. Add the lentils, rice, stock, lemon juice and rind.
  5. Cover the pot and turn the heat down to low. Cook for 20-25 minutes until the liquid has been absorbed.
  6. Season with salt, stir in the frozen peas and garnish with parsley.
