Instructions
Preheat a waffle iron.
In a large bowl combine the flour, sugar, baking soda and cinnamon. Stir to combine.
In a separate bowl add the ricotta, eggs, vanilla and apple.
Add the wet ingredients to the flour mixture and stir to combine. If the mixture looks too dry add the buttermilk a little at a time until the batter is thick but pourable.
Lightly spray the waffle iron and follow recommended instructions for cooking.
Notes
I've made waffles with store bought ricotta and did not require any buttermilk. Depending on how dry the ricotta is you may need up to ⅓ cup of buttermilk. The batter should be pourable yet quite thick.
