Turtle Cookies

Serves: 24
- ½ cup butter, softened
- ½ cup brown sugar
- ¼ cup white sugar
- 1 tsp vanilla
- 1 egg
- 1⅓ cup flour
- ¼ cup cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup semi sweet chocolate chips
- ¼ cup thick caramel dip
- ½ cup Pecans, chopped finely
- ¼ cup semi sweet chocolate chips with ½ tsp butter
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper
- Combine the butter and sugars until light and fluffy. Add the vanilla and egg and stir until combined.
- Mix in the flour, cocoa powder, baking soda and salt. Stir in the chocolate chips.
- Chop the pecans and place them in a shallow dish.
- Roll the dough into 24 even sized balls pressing them into the pecans as you go.
- Bake the cookies on the pan for 10 minutes.
- Let the cookies cool on the baking pan for a few minutes then press the middle in to create an indent.
- Place a small amount of caramel in each indent.
- Melt the chocolate chips with the butter - I use my microwave, stirring every 30 seconds.
- Drizzle the chocolate over each cookie.
