Coconut Bundt Cake

Ingredients
  • 1 cup butter, softened
  • 1½ cups sugar
  • 4 eggs
  • 2 tsp coconut extract
  • 2 tsp vanilla extract
  • 2 cups coconut flavored yogurt
  • 4 cups flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 cups flaked coconut
  • Caramel sauce and powdered sugar *optional
Instructions
  1. Preheat the oven to 350 degrees and coat the bundt pan with cooking spray.
  2. In a large bowl beat the butter and sugar until light and fluffy. Add the eggs, both extracts and yogurt.
  3. Add the flour, baking soda, baking powder, salt and coconut flakes. Mix until fully incorporated.
  4. Spoon the batter into the pan - only ¾ full.
  5. Bake for 50 minutes or until a tooth pick comes out clean.
  6. Let the cake cool before topping with caramel and powdered sugar.
Notes
Fill the pan ¾ full so the cake doesn't puff up too much. I had enough batter to fill a small foil pan for a 25 minute cook time.
