Sweet Potato Stacks

Serves: 12 stacks
Ingredients
  • 3 large sweet potatoes, sliced
  • 1 sprig of rosemary, diced
  • 2 tbsp. olive oil, plus more for drizzling
  • salt and pepper to taste
  • parmesan cheese, finely grated
Instructions
  1. Preheat the oven to 375 degrees.
  2. Peel and slice the sweet potatoes and place in a large bowl.
  3. Give the rosemary a dice and add to the bowl. Season with salt, pepper and as much parmesan as you like. Toss to combine
  4. Evenly stack the slices in the muffin baking pan and drizzle olive oil over each stack.
  5. Bake for 40-45 minutes.
  6. When they are near ready grate some extra parmesan and sprinkle over top.
