Ingredients
  • 1¼ cup flour
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ cup Opadipity Vanilla Almond Greek Yogurt dip
  • ¼ cup milk
  • ¼ cup vegetable oil
  • 1 egg
  • ¼ cup raisins
  • ¼ cup nuts
  • ½ cup grated carrots
Instructions
  1. Preheat the oven to 400 degrees and line a muffin tray with 12 paper liners
  2. In a large bowl combine the flour, oats, sugar, baking powder, baking soda, salt and cinnamon. Stir to combine.
  3. Add the dip, milk, oil, egg, raisins, nuts and carrots. Stir to combine and divide the batter evenly into the paper liners.
  4. Bake for 25 minutes then cool for 10 minutes before transferring the muffins to a wire rack. Store covered.
