Banana pancakes

Serves: 10 pancakes
Ingredients
  • 1¼ cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tbsp sugar
  • ½ tsp salt
  • 1 egg
  • ¼ cup vegetable oil
  • 2 tsp banana emulsion or extract
  • 1½ cups buttermilk
  • Syrup, whipped cream and bananas for serving
Instructions
  1. Mix the dry ingredients together in a large bowl. In another bowl whisk together the egg, oil and extract. Stir in the buttermilk. Add the wet ingredients in with the dry and stir until combined.
  2. Preheat a pan or griddle over medium heat and coat lightly with cooking spray.
  3. Using a ¼ measuring cup, place the batter onto the pan and cook for about a minute on each side.
