Mint chocolate thumb print cookies
 
 
Serves: 2-3 dozen cookies depending on size
Ingredients
  • 1 cup butter, softened
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups flour
  • ⅓ cup cocoa powder
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 tsp baking powder
For the Mint chocolate
  • ¾ cup chocolate chips
  • 3 tbsp whipping cream
  • 3 tbsp butter
  • ¼ tsp mint extract
  • Sprinkles to garnish
Instructions
  1. Preheat the oven to 350 degrees
  2. Cream the butter and sugar in a large bowl.
  3. Add the egg and vanilla. Mix until fully incorporated.
  4. Stir in the flour, cocoa powder, salt, baking soda and baking powder.
  5. Roll the dough into small balls and place on a baking sheet.
  6. Lightly press down with your thumb to create an indent
  7. Bake the cookies for 10 minutes.
  8. If the indents have risen up too much press down each cookie again with your thumb.
  9. Let cool before topping with the mint chocolate
To make the topping
  1. In a small pan melt the chocolate chips with cream and butter. Stir to combine and add the extract.
  2. Spoon on top of cooled cookies and finish with sprinkles.
