Roasted brussel sprouts with carmelized onions and bacon
- 1- 500 g bag frozen brussel sprouts
- 2 tbsp olive oil
- 2 tbsp butter
- 1 medium white or yellow onion
- 4 pieces of bacon, diced.
- ⅓ cup pistachios
- ¼ cup dried cranberries
- salt and pepper to taste
- Preheat the oven to 400 degrees
- Toss the brussel sprouts in olive oil and roast for 30-35 minutes, turning half way.
- Meanwhile caramelize the onions in a large pan with extra olive oil and butter. Set aside.
- Cook the diced bacon until crispy. Drain and set aside.
- Combine the brussel sprouts with the onions, bacon, pistachios and dried cranberries.
- Season with salt and pepper and serve warm or room temperature.
