Peanut butter oat fudge bars

Ingredients
  • ½ cup green lentils, rinsed
  • 1 cup water
  • ¼ cup peanut butter
  • ¼ cup butter
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1¼ cup flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1½ cups oats
For the fudge
  • ½ cup sweetened condensed milk
  • 2 tbsp. butter
  • 1 cup semi sweet chocolate chips
Instructions
  1. Preheat the oven to 350 degrees and line a 9 inch baking pan with foil or parchment paper.
  2. Combine the lentils and water in a small sauce pan. Boil for 15 minutes.
  3. In a food processor pulse the softened lentils until smooth. Adding a few tsp of water if needed.
  4. Add the peanut butter, butter and sugar until fully combined.
  5. Pulse in the egg and vanilla.
  6. Add the flour, baking soda, salt and oats. Run the processor on low until a dough is formed.
  7. For the fudge
  8. Heat the milk, butter and chocolate chips until smooth.
  9. Gather ⅔ of the dough and press into the pan. Pour the fudge evenly over the dough.
  10. Drop the rest of the dough by tablespoons over the fudge.
  11. Bake for 25 minutes. Cool before slicing.
