Banana chocolate-peanut butter ice cream

Serves: 4 cups
- 2 whole eggs
- ¾ cup sugar
- 2 cups heavy cream
- 1 cup milk
- 2 over ripe bananas
- ½ lemon, juiced
- ½ cup chopped peanut butter cups or fudge
- In a sauce pan whisk the eggs with the sugar until well combined. Add the heavy cream and milk.
- Heat over medium until the mixture reaches 180 degrees. Strain using a fine mesh strainer and cool completely in the fridge.
- Once the mixture is cold pour it in your ice cream machine or attachment and follow instructions based on your machine.
- Meanwhile pulse or blend the the two bananas and lemon juice until very smooth. Chop the peanut butter cups and set aside.
- When the ice cream starts to harden add the banana mixture while the machine is stir turning. Once it's fully combined add the peanut butter cups.
- Freeze the mixture to harden further.
