Chocolate cupcakes with chocolate cream cheese icing
 
 
Serves: 24 cupcakes
Ingredients
  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • ¾ cup cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup coffee
  • ½ cup vegetable oil ( I used ¼ and ¼ applesauce)
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
For the Icing
  • ¼ cup butter, softened
  • 1 (8oz) package cream cheese, at room temperature
  • 3 oz unsweetened chocolate
  • pinch of salt
  • 1 tsp vanilla
  • ¼ cup half and half
  • 4 cups powdered sugar
Instructions
  1. Preheat the oven to 350 degrees and line cupcake pans with paper liners.
  2. Stir together sugar, flour, cocoa powder, baking soda, baking powder and salt in large bowl. Add the eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for a few minutes.
  3. Divide batter evenly between the cupcake liners.
  4. Bake for 20 minutes or until a toothpick comes out clean. Let the cupcakes cool at least 10 minutes before transferring to cooling racks.
For the icing
  1. Melt the chocolate in the microwave or double boiler and let it cool down in the fridge while you prepare the icing.
  2. Combine the cream cheese and butter. Beat until light and fluffy.
  3. Add the vanilla, chocolate and half and half. Mix until thoroughly combined.
  4. Add the powdered sugar a cup at a time beating well after each addition.
  5. Frost as desired.
