Coconut Bundt Cake

- 1 cup butter, softened
- 1½ cups sugar
- 4 eggs
- 2 tsp coconut extract
- 2 tsp vanilla extract
- 2 cups coconut flavored yogurt
- 4 cups flour
- 2 tsp baking soda
- 2 tsp baking powder
- ½ tsp salt
- 2 cups flaked coconut
- Caramel sauce and powdered sugar *optional
- Preheat the oven to 350 degrees and coat the bundt pan with cooking spray.
- In a large bowl beat the butter and sugar until light and fluffy. Add the eggs, both extracts and yogurt.
- Add the flour, baking soda, baking powder, salt and coconut flakes. Mix until fully incorporated.
- Spoon the batter into the pan - only ¾ full.
- Bake for 50 minutes or until a tooth pick comes out clean.
- Let the cake cool before topping with caramel and powdered sugar.
Fill the pan ¾ full so the cake doesn't puff up too much. I had enough batter to fill a small foil pan for a 25 minute cook time.
