Chocolate Peanut Butter Avocado Pudding

Ingredients
  • 1 ripe avocado, pitted and peeled
  • 3 tbsp unsweetened cacao powder
  • 2 tbsp. pure maple syrup
  • 1 tbsp peanut butter powder, such as PB2
  • 1 tbsp chia seeds
  • 6-7 tbsp almond milk
  • Toppings: Banana, raspberries, cacao nibs
Instructions
  1. Place all ingredients in a blender or food processor. Blend until smooth, scraping down the sides as necessary. Refrigerate at least an hour before serving. Top as you like with fruit, nuts, seeds, cacao nibs.
Notes
I doubled my recipe because it's just so good! Adjust the sweetness to your liking with more or less sweetener.
