Split the spaghetti squash in half and scrape out the seeds. Microwave cut side down in a dish with ¼ cup of water loosely covered with plastic wrap for 12 minutes.
In a large wok, heat the oil and stir fry the onions until softened. Add the garlic, coleslaw mix and bean spouts. Using a fork, lightly shred the squash and add it to the wok.
Stir in the hoisin and soy sauce. Adjust the sauces as desired and serve.
