Spaghetti Squash Chow Mein

Ingredients
  • 1 spaghetti squash
  • 2 tbsp vegetable oil
  • 1 medium onion, sliced thin
  • 2 garlic cloves, finely grated
  • ½ bag coleslaw veggie mix, about 7oz
  • 1 bag of bean sprouts
  • 2 tbsp hoisin sauce
  • 3 tbsp soy sauce
Instructions
  1. Split the spaghetti squash in half and scrape out the seeds. Microwave cut side down in a dish with ¼ cup of water loosely covered with plastic wrap for 12 minutes.
  2. In a large wok, heat the oil and stir fry the onions until softened. Add the garlic, coleslaw mix and bean spouts. Using a fork, lightly shred the squash and add it to the wok.
  3. Stir in the hoisin and soy sauce. Adjust the sauces as desired and serve.
