Mint chocolate thumb print cookies
Serves: 2-3 dozen cookies depending on size
- 1 cup butter, softened
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla
- 2 cups flour
- ⅓ cup cocoa powder
- ½ tsp salt
- ½ tsp baking soda
- 1 tsp baking powder
- ¾ cup chocolate chips
- 3 tbsp whipping cream
- 3 tbsp butter
- ¼ tsp mint extract
- Sprinkles to garnish
- Preheat the oven to 350 degrees
- Cream the butter and sugar in a large bowl.
- Add the egg and vanilla. Mix until fully incorporated.
- Stir in the flour, cocoa powder, salt, baking soda and baking powder.
- Roll the dough into small balls and place on a baking sheet.
- Lightly press down with your thumb to create an indent
- Bake the cookies for 10 minutes.
- If the indents have risen up too much press down each cookie again with your thumb.
- Let cool before topping with the mint chocolate
- In a small pan melt the chocolate chips with cream and butter. Stir to combine and add the extract.
- Spoon on top of cooled cookies and finish with sprinkles.
